I found another monk variant in Dragon Magazine #331. Works well as a GURPS martial style.

 
Sidewinder – 5 points
 
The Order of the Sidewinder, a small and controversial order, is among the world’s strangest and least understood monastic organizations. Called sidewinder monks, those of this order imitate the attitudes of the deceptive snake from which they take their name. Some practitioners of this style are even known to be able to grow fangs!
Skills: Fast-Talk, Intimidation, Karate, Stealth.
Techniques: Counterattack (Karate); Disarming (Karate); Elbow Strike (Karate); Exotic Hand Strike; Feint (Karate); Sweep (Karate).
Cinematic Techniques: Grand Disarm (Karate); Lethal Strike; Timed Defense.
Perks: Biting Mastery; Rapid Retraction (Punches); Sure-Footed (Sand); Sure-Footed (Uneven).
 
Optional Traits
Primary Characteristics: Increased DX.
Secondary Characteristics: Increased Basic Speed or Basic Move.
Advantages: Combat Reflexes; Enhanced Dodge; Fangs (Chi, -10%; Switchable, +10%); Striking ST.
Disadvantages: Overconfidence; Vow (Always fight unarmed).
Skills: Brawling.
